Cauliflower Pizza



Did you see that? Look at that picture one more time. YUM. I figured that a cauliflower pizza crust would taste just fine, but I had not idea I'd like it better than BREAD crust pizza!

Since discovering the link between gluten and joint issues (see an article here), I've been trying to implement this kind of diet into our lives. Both my husband and Little R have joint issues, and I'm really hoping this will alleviate the need for more medications and surgeries.

So for this pizza, ya just need the following:

  • Approximately 1 lb of cauliflower
  • 2 eggs
  • Italian Seasoning (or Thyme, Basil, and Garlic Salt)
  • Toppings of choice

Preheat oven to 400 degrees.

Grate the cauliflower, or pulse in a food processor until it makes a rice-type texture. 

Place in a microwave-safe bowl and cook on high for about 5 minutes. Once done, use paper towels to squeeze out every bit of water you can. The drier you can get the cauliflower, the more bread-like your crust will be. 

Once dehydrated (meaning you squeezed out all the water, ha!) add two eggs and the italian seasoning. Mix well. 

Spread this mixture onto a stone or cookie sheet lined with parchment paper. Bake for 40 minutes. 


Once cooked, remove from oven, add sauce and toppings of choice (as you can see mine are bacon and mushrooms - hello goodness!), and bake at 450 for 7 minutes, or until toppings are golden brown. 




I used mozzarella for our cheese topping, but any style will work. I like how the saltiness of the mozzarella added to the dish instead of overpowering it like usual. I generally prefer a blend of white and yellow cheeses, like this Shredded Cheese Pizza Blend.

Both kids AND my husband LOVED this pizza, which meant there were no leftovers. Sad for hubby's lunch today, but good for our bellies last night! Best part? No uncomfortable stomach-aches from greasy bread. We ate fabulous protein and a large helping of veggies - from pizza!

I have got to try cauliflower crust! I just got off a Whole30 and I made regular pizza tonight -- I do not feel great. This is the simplest recipe I've seen for cauliflower crust -- thanks!
